I know, I know, it’s Friday which is supposed to be Fiesta Friday….

But since I have been seriously slacking…here are some one-liners to make you smile and then I will give you the quick Pizza Pasta I made last night – it was yummy and the reason for the odd ingredients is ummmm…LACK OF PLANNING ON MY PART!

Quick Pizza Pasta

Ingredients
1 c pizza sauce  
2 serving(s) Jennie-O Turkey Store Lean Italian sausage link, sweet  
2 c water  
8 oz uncooked multi-coloured rotini  
2 c mushroom(s)  
1 c onion(s) (chopped)  
18 slice(s) Hormel Pillow Pack Turkey Pepperoni  
10 3/4 oz Campbell's Healthy Request Cream of Mushroom Soup  
1 c uncooked macaroni  
1 c shredded part-skim mozzarella cheeses   

Instructions
Brown sausage and drain, throw onions and mushrooms in sometime during cooking...
Add water (adjust this as needed to cook pasta but not leave dish "soupy") pizza sauce and pasta, simmer covered until pasta is done.
Add soup and mix until texture seems right.
Add pepperoni then cheese and stir until cheese is melted. Serve.

Sloowww Monday....No fun just food!




Slow Cooker Chicken and Corn Enchilada Casserole

8 Servings

Ingredients
10 3/4 oz Campbell's Healthy Request Cream of Mushroom Soup   
8 oz reduced-fat sour cream   
4 oz green chili sauce, diced   
3/4 pound(s) Chicken breast without skin, roasted, diced   
2 cup(s) frozen corn kernels   
10 oz canned enchilada sauce   
12 item(s) corn tortilla(s)   
2 cup(s) low-fat shredded cheddar cheese   

Instructions

Stir together soup, sour cream and chilies.

Fold chicken and corn intot the soup mixture.

Pour half the can of enchilada sauce on the bottome of a 4-5qt slow cooker and arrance half the cut tortilla pieces over the sauce.

Spread half of chicken mixture over cut tortilla and enchilada sauce and top with half the cheese.

Repeat layer, starting with remaining enchilada sauce and cut tortillas.

Cook on low setting for 4-6 hours.

Tip: If you are a black bean fan, go ahead and add some - just count the points!

Ok this is probably a good thing…although it doesn't really seem like it right now!

As in a learning experience…

Last night as my daughter and I were having some quality “mommy and me” time, shopping for school supplies, I decided I would take her to dinner also.  We came out of the last store and there was a KFC across the street and she said Yum! That’s where I want to go!  So I am thinking ok they have grilled chicken right?? I can be good, right?  WRONG!!  This appears to be something akin to sending a drug addict into the pharmacy after hours alone, or an alcoholic into a bar to clean at night…NOT a good plan.

SO HERE IS WHAT I ATE:

Grilled Chicken Breast 5 PP
Grilled Chicken Thigh 4 PP
Grilled Chicken Wing 2 PP (ok this was an accident, I asked them to give me the thigh instead but they didn’t and I had to go ask for it – which was stupid, because the wing is 2PP and the thigh is 4pp and since I am ridiculous I ate them both – why didn’t they take it away from me? Can’t you tell that I can’t be trusted with food???)
Cole Slaw 5 PP
Potato Wedges 5 PP
Biscuit 5 PP
Honey 2 PP

This is 27 Points Plus!!!! *^&*^*&*(^(*^$%##&# This is almost as many points as I get in a WHOLE day!!!!

Ok here is the reason I am telling you this, well there are a couple actually, OK LOTS!  I  will list some of them now:

Ø      I woke up in the middle of the night thinking I was going to be sick, and I still kind of feel this way…I am thinking that my body, after almost 14 months straight on the plan, can just not handle this junk anymore!  That in itself is a good thing!
Ø      I can’t always be trusted around food, can you?? 
Ø      ALWAYS HAVE A PLAN, this “La dee da, they have grilled chicken crap doesn’t work for me…I should have been figuring out Points Plus in the car from my Dining Out Guide (Conveniently located at all times in the console of my vehicle for just such an occasion…) BEFORE  I entered the den of iniquity!! (Not knocking KFC in general, I am really just making fun of myself and my weaknesses)
Ø      If I were going to cheat, there is stuff I like a whole lot better than KFC, so I actually felt a little disappointed during my guilt ridden pig out session!!!
Ø      I am trying to stay accountable here, NOTHING TASTES AS GOOD AS SKINNY FEELS doesn’t always work for me.


SO this being said, feel free to give me your comments whether they be “shame on you’s” or “keep pluggin’ away’s”!!!

On a positive note I have been trying to walk every day, at lunch and after dinner, I try to do at least 2 miles a day and on Monday did 6 (YES SIX) MILES!!! 2 at lunch and 4 after dinner!!

Let me know what is going on with you and I will try to get you a recipe or three in the next day or so!

Keep up the good work and think of me if you are struggling - NO DON'T GO TO KFC - THINK ABOUT HOW BAD I AM FEELING!! AND TODAY IS WEIGHIN DAY - LORD HAVE MERCY!

With all this moving I have been doing…


I will be very disappointed if I don’t see a difference on weigh in day tomorrow!  Or will I just convince myself that I am gaining muscle, which weighs more than fat!!  Yeah that’ it…Phew…I feel better now!  How about yooose guys?  Everybody moving, losing weight and enjoying the summer?


Broccoli Side Dish
1 Points Plus
4 Servings

Ingredients

5 C broccoli florets
4 t low-sodium soy sauce  
2 t unpacked brown sugar  
1/2 t garlic, minced  
2 T fat-free margarine  

Instructions

Place broccoli in a large microwave-safe bowl.
Combine the remaining ingredients; pour over broccoli.
Cover and microwave on high for 3-4 minutes or until tender.
Serve with a slotted spoon.

Ok, so maybe you all better sit down….



Cuz I have some pretty big news…I WALKED 4 MILES YESTERDAY…and no my car didn’t break down… I actually did it on purpose!! I know, stop the presses, but believe it or not (I am still having trouble with this, being the slow convert to exercise that I am) it felt good!  I have been trying to do at least a mile every day, either on my treadmill in the morning (which sucks) or at lunch listening to the headphones (audiobooks are my personal favorite choice). So yesterday I did my obligatory nooner (NOT THAT KIND – THE WALK, WEREN’T YOU PAYING ATTENTION??), and then after dinner I decided to go again!  I took my daughter and some neighbor girls to the trail and let them ride bikes while I walked.  Don’t tell anyone but I actually ran part of the way back… AND NOBODY WAS EVEN CHASING ME!  I tried to do it when the girls weren’t paying attention and up ahead of me…but two of them caught me…you should have seen the panicked looks on their faces, I am pretty sure they thought I saw the boogieman in the woods…

How is everyone’s week going…anyone local wanna join me walking, hit me up!

Cheesy Pizza Pasta Salad

Ingredients

9 oz cheese tortellini, without sauce  
1 medium green pepper, cut into strips  
1 C shredded fat-free mozzarella cheese  
24 slices Hormel Pillow Pack Turkey Pepperoni  
1/2 C Fat Free Italian dressing  
6 large leaves lettuce 

Instructions

COOK pasta as directed on package. Rinse with cold water; drain. Place in large bowl.
ADD peppers, cheese and pepperoni; mix lightly. Add dressing; toss to coat.

REFRIGERATE 1 hour. Line serving bowl with lettuce leaves just before serving; fill with pasta mixture.

I think you could substitute some pizza type sauce for the Italian dressing on occasion for a little more pizza feel! I would skip the rinsing with cold water and refrigerating if this was the case and have a warm dish!

And just because I am feeling so generous, here is a reprint of an old favorite for any newcomers!  Give this one a second look and TRY IT – it is way more delish than you would imagine!


Cheesy Chicken Spaghetti

Ingredients

3 C cooked whole-wheat spaghetti (.50)
10-3/4 oz Campbell's 98% Fat-Free Cream Of Chicken Soup (1.25)
15 oz canned tomatoes with green chilis (.89)
1 1/2 C Chicken breast without skin, roasted (chopped)  
4 oz Kraft Velveeta Light Reduced-Fat Pasteurized Processed Cheese Product (1.25) 
1/4 C onion, chopped (free from the garden)
1/4 C green pepper, chopped (free from the garden)

Instructions

Cook spaghetti according to package directions.
Put all other ingredients in large bowl and microwave until soft, then blend.
Mix spaghetti in and put in sprayed 9x13 baking dish.
Bake at 350 for about 15 minutes.

UP 1.8lbs YESTERDAY!!! I am feeling a little frustrated…(but maybe a little better now that I swore…even if it was in print!)  I feel like I am never going to reach my 40lb milestone – it is feeling like a mile-boulder at the moment!! I am going to use the fact that I quit smoking about 3 and a half months ago as my feel good thing today!  I guess I should be happy to have not GAINED 40lbs doing that, huh?!?

Ok on to a little Freaky, I mean Fiesta Friday stuff!  Hope you all have a great weekend!

Chicken Fajitas

Ingredients

12 oz Chicken breast without skin, roasted, this is one pound cut into thin strips raw - this (chopped)  
1 large onion, cut in slivers from pole to pole  
1 large green pepper, cut in slivers, pole to pole  
1 large sweet red pepper, cut in slivers, pole to pole  
4 garlic cloves, finely chopped (medium)  
2 T chili powder  
3 t ground cumin  
1 t black pepper  
ground red pepper, to taste  
table salt, to taste  
8 item(s) Mission® Carb balance whole wheat tortillas - fajita size, or something comparable that is only 1 Points Plus  

Instructions

Spray wok with cooking spray, generously. Cook the chicken slices until done, stir regularly. Add everything except tortillas. Mix well. Cook covered. Stir every few minutes. It's done when the peppers are tender and the vegetables are starting to get browned in spots. Serve with warmed flour tortillas. 

You could also eat 2 of these for 8 Points Plus if you were so inclined...

Sideways Wednesday, or halfway to the weekend….




In my world anyway!  How is everyone’s week going?  I tried this new thing this morning…stepping on the scale at home rather than waiting for weigh in day…I am not sure I liked it and nearly had to go out in the back yard and retrieve the scale, because that is where it ALMOST ended up!!! Let’s just hope that it just zero’s out different than my happy little WW scale at the meeting place does!! I am really wanting to make the 40lb mark tomorrow, but I am almost afraid that would entail getting on the treadmill tonight after work and just staying on their continuously until bedtime, AND THEN AGAIN WHEN MY ALARM GOES OFF IN THE MORNING UNTIL IT IS TIME TO SHOWER FOR WORK!! I have everything crossed that is humanly possible…and then some!!  Send me some good thoughts, mojo, karma, prayers etc, please!

Haven’t tried this yet but it sounds yummy to me, although a little garlic and onion would go a long way in my book baby!


Chilled Summer Squash and Tomato Orzo Salad
4 Points Plus
6 Servings

Ingredients
1 1/2 c uncooked orzo  
1 tsp red wine vinegar  
1 medium zucchini, diced  
1 medium yellow summer squash, diced  
1 1/2 c grape tomatoes, halved  
black pepper, to taste  
salt, to taste  
1 basil, to garnish  

Instructions

1. Cook the orzo according to the package directions. Drain.
2. In a medium skillet, add the cooking spray and red wine vinegar and sauté the diced zucchini, diced yellow squash and halved tomatoes for 4 to 5 minutes, stirring occasionally.
3. Toss the cooked vegetables with the orzo.
4. Chill at least two hours in the refrigerator before serving.
5. Serve summer squash and tomato orzo Salad for a light lunch, or for dinner with a side of grilled chicken or fresh fruit.

Sloooowww Monday anyone?



I say that because I am feeling slow, DESPITE THE FACT that I set my alarm for 5:45 (I know, right – middle of the night!!) and got up and walked 20 minutes on the treadmill!! While I know 20 minutes might not seem like much BUT BELIEVE YOU ME AT NOT EVEN 6 AM FOR A PERSON THAT HAS NEVER REALLY EXERCISED REGULARLY….IT’S A MILESTONE!.  I have also been on it every day since Thursday, except Saturday day when I took an actual bike ride with the family (yes on real bikes, OUTDOORS!).

My good news for the week is that I was down a whopping 2.2lbs for a total of 38.2!! I am hoping to hit 40 this week!!  Another thing I was just realizing is that I have now been back on plan for over a year straight!  Do ya think maybe I am starting to figure out that I have to live the plan, not just use it when I need/want it and then toss it aside…. Does anybody else have any milestones they would like to shout out....I am all for acknowledging a "mile-pebble" THEY ARE ALL MILESTONES IN MY BOOK!! 

Here is a little slow fun for you…have I mentioned that I need a new one, you know, the kind with the probe and the auto-shift setting thinamajiggy, do any of you have those kind?  I am sometimes frustrated with overcooked food after my 10 hour absence on a regular work day!

Buffalo Chicken Breasts
4 Points Plus
4 Servings

2 Chicken, breasts, raw, without skin & bone, split into 4 pieces  
1/4 c hot pepper sauce (I like Frank's!)
2 T vinegar  
2 T light butter  
1 t paprika  

Instructions

Place chicken in slow cooker. Mix together remaining ingredients and pour over chicken. Sprinkle with paprika. Cook on Low for 6 to 8 hours.
I would recommend a smaller slow cooker, just enough for everything to fit!
Substitution, you can also use Worcestershire instead of vinegar!

Big news on how to save a point!!


Lately I have been eating Yoplait Light Yogurt (blue carton) as a snack, because first off they are good for me (look at me all trying to be healthy!!) and second of all they are fairly filling and low in points, with most of them coming in at about 3 Points Plus for a 6oz container.  Well trying to be the Frugalista that I want to be, I was checking sale prices and since I had been paying $6 for 10 of these lately, I was a little surprised to see them at $7 for 10!  My little heart sank and I started looking at the products around them quickly zeroing in on the Dannon Light & Fit (purple carton) at $5 for 10!! Yay!!! Now the real test POINTS PLUS values!  Well hot d#** skippy if all of the ones I checked were 2 Points Plus per 6oz  container!! I bought 15 of them and have had the following so far, and yes both of them were 2 Pointers!! Pineapple Coconut (Yum) and Strawberry Cheesecake (YUM YUM!!). 

Now this might not seem like that big of a deal but let me put it to you this way…If I eat one for lunch every week day that is 5 points!  That means I have saved 5 flex points in Julieland!!

Just a little helpful hint for my fellow foodies!  I will try to get you a recipe again soon!

Happy Fiesta Friday all!



And boy am I walking on cloud 9 today…yesterday was weigh in day and went in with a heavy heart (let’s just not mention my heavy (fill in the blank here) you know what…being that it was my birthday season and I had two dinners out…Red Lobster and Fricano’s Pizza…’nuff said right?  Well not so fast my fabulous foodies…I was down 1.8lbs-NO THAT IS NOT A TYPO-and all I can say is that I managed to keep some self control and eat sensibly (WELL OK, MORE SENSIBLY THAN I WOULD HAVE A YEAR AGO, OK?) and it paid off…now I am not recommending this on a weekly basis mind you, and I am still wondering if it might wait a week to catch up to me, but all the more reason to stay on task this week right?  How is everyone else doing this week?  Any trials, tribulations, challenges or CELEBRATIONS you would care to share??  This isn’t just all about me you know; we are partners in crime here!


Here is a little tip for you that I read in my WW Weekly (YES YOU ARE SUPPOSED TO READ THEM).  Maybe it’s just me but sometimes when figuring points on eTools Recipe Builder I am a little stumped by my, say, 1 lb of ground beef, because it comes up two ways, cooked and raw…well you can see my dilemma here (it’s really not just me is it?) umm it starts out raw…but…ok well here is what the WW Weekly says “Raw meat loses about 25% of it’s weight in cooking so 4 oz raw would be 3 oz cooked”, or for me the big light bulb was 1 lb raw is 12 OZ COOKED!!!


And just because I am feeling so good, its bonus day and you get two recipes for the price of one…wait does that mean you are supposed to be paying me???

I LOVE hot spicy stuff so these are one of my very faves and I can eat bunches of them, but if spicy is not your thing…you might want to grab a glass of milk just to read the recipe!  


Stuffed Jalapenos
0 Points Plus for 1*


Ingredients
28 oz canned Jalapeno peppers, Make sure to get the whole ones, not sliced!  
1 c low-fat shredded cheddar cheese  
1 T minced garlic, or more - to taste  
1 c fat-free cream cheese, (8oz pkg)   


Instructions
First off let me tell you these taste much better with the canned jalapenos, I have tried them with fresh and they are just not the same!
Cut the tops off Jalapeno's over a plate or grooved cutting board so you can retrieve some of the juice and seeds later. Slice them in half lengthwise so they are like little boats.
Mix cream cheese, cheddar cheese and garlic in a bowl. Then add juice and/or seeds to TASTE. This greatly determines how hot these will be!!!!
I then use the Pampered Chef decorator thingy because it works great, to fill the peppers with the mixture, you could probably also use a pastry bag or just spoon it in carefully. 
*One big can makes about 50 of these and 1 is 0 Points Plus! 
Recipe given to me by Hillary H., but modified by me to be more Point friendly!

And BEEF is what’s for dinner last night:
Beef and Black Bean Enchiladas
7 Points Plus 
8 Servings

Ingredients

8 Don Marcos Healthy style Fat Free tortillas


12 oz cooked extra lean ground beef

28 oz canned diced tomatoes

1 C shredded 2% reduced fat cheddar & Monterey Jack cheese

15 oz canned black beans, drained and rinsed

10 ¾ oz enchilada sauce, you choose hot, med or mild!


Preheat oven to 350 and spray 9x13 pan. Brown ground beef - I added some onion, but that is completely up to you - you can also sprinkle with onions when serving or throw some in the enchiladas themselves. Season ground beef with taco seasoning according to pkg directions.

Lay out tortillas and evenly distribute the meat mixture and rinsed, drained beans among them.

Divide half the can of tomatoes among these also.

Roll enchiladas and lay in pan, cover with remaining tomatoes, cheese and enchilada sauce.

Bake until cheese is melted.

One enchilada was pretty filling and I served with baked scoops and salsa (count the points!), green beans and some fruit.

So being the random kind of chica that I am…



I had the same lunch as yesterday, however instead of Italian dressing I used Newman’s own Lowfat Sesame Ginger Dressing (and counted the points of course!) and boy was it yummy!! This is a great and flavorful dressing with a nice asian feel.  If you happen to be eating at McDonald’s, YES I KNOW I SHOULDN’T – BUT SOMETIMES I JUST CAN’T HELP IT OK!, you can get this exact dressing with a nice grilled chicken salad and get the good without the guilt (I am all about that, let me tell you!!!). 

I am going to talk about something else a little off topic today, but relevant I think,  wondering if I can get any feedback.  Like most of you, I work full time and so by the time I get home at 5:30 or so it has been a long day and as much as I love to cook, it sometimes seems that it takes forever to get a meal on the table…being that I am not a great meal planner (as in planning a menu for the week) I find that if I do a little bulk cooking and put things in the freezer it sometimes makes things easier…for instance…

When ground beef (only the very leanest please) is on sale, I buy lots and lots and cook it up crumbled, sometimes with onions and/or green peppers.  I then use my handy dandy little WW food scale, weigh it, put it in a zipper bag, mark it with the date, and freeze it.  I also make taco meat ahead of time like this as well.  It makes for an easy casserole night!  I do this with very lean ground turkey sometimes as well, so I have saved time, money and POINTS!  Very cool huh??   Another thing I haven’t done yet but am looking forward to trying, (this I borrowed from one of my other favorite sites, www.sarahsdeals.net , she does the beef thing I believe also, but I have been doing that one for awhile, myself) is getting my boneless skinless chicken breast, on sale, not frozen and freezing it in the right portions for a meal, with some sort of marinade right in the bag!  How cool is that, pull it out of the freezer to thaw while you are at work and it is marinating at the same time!

It’s my Birthday Season and I feel like I am another year older…



(Well that’s a given) and about 8,000 points in the hole this week…with yet another birthday dinner out, that I need to survive tonight.  All you local peeps feel free to shout out some freebie deals where I can choose some healthy eats!  So because of all of this, here is what I made for lunch and it was REALLY GOOD!!

Ham and Brocco Roll Up
5 Points Plus

1 Flat Out Light Italian Herb wrap
1 Laughing Cow Light Garlic and Herb wedge
2 Slices 98% Fat Free lunch meat
6 oz Mann’s Broccoli Cole Slaw – IF YOU HAVEN’T TRIED THIS, GET IN YOUR CAR RIGHT NOW AND GO BUY SOME!!! SEE NOTES BELOW SO I CAN GET ON WITH MY RECIPE!
Sprinkle of fresh chives from my garden (or a little dab of onion would do ya too ya know…)
2 T Kraft Free Zesty Italian dressing (you might not need this much, but I wanted to be sure of points value)

Spread the Laughing Cow on wrap and lay the 2 slices of ham out to cover it all.  Spread, chives and broccoli slaw over top and drizzle with dressing.  Roll up and enjoy!!

OK – Back to the broccoli slaw, I found this stuff through Hungry Girl and it is the bomb!  Lots of bulk, without lots of points!  I have only been using this in stir fry and wraps but I just looked at their website and HOLY RECIPE BONANZA!! Yay, new things to try!  Check it out!

Nothing tastes as good as skinny feels!!




Ok, how many of you have heard that expression? Well I am struggling with this…cuz let me tell you there is some stuff on some days that I would gladly be fat just to have…well not really, but it sure feels like it sometimes (A LOT).  I know that this probably all has more to do with me and what’s going on in my life than it really does the food itself, and I am guessing I am not the only one (not that I am wishing it on anyone, but let’s hope!) with this problem.  Any tips tricks, or magic pills, that anyone would care to share?  Would anyone like to tell me what their particular “poison” is?  I have shouted mine out before but let’s just get it out there again, shall we?  CHEESE is ONE of my biggest problems!! I love it!!   I almost can’t find anything that wouldn’t taste better with CHEESE!  And MEAT, I LOVE MEAT, even though I really like vegetables, I REALLY LOVE MEAT AND CHEESE!  GEE how come I got fat?  Any ideas??? Ok here is a great side dish to go along with some nice grilled MEAT lol, no really it’s ok, just keep it lean and scale back on the portions.  (Telling you this seems to be a much more acceptable than talking to myself, and since I am listening also – BONUS!)  Can you feel me here?

Marinated Zucchini & Parsley Salad

4 Servings

Ingredients
2 medium zucchini, sliced thinly  
1 c red onion(s), finely chopped  
1 c parsley, chopped fresh Italian  
1/4 c Kraft Free Italian Salad Dressing  
1 T pesto sauce  
Instructions

COMBINE ingredients.

REFRIGERATE several hours or until chilled.

For added color, prepare using 1 yellow summer squash and 1 zucchini.

If you like:

Add 2 Tbsp. fresh chopped basil to salad before refrigerating.

Salad can be refrigerated up to 24 hours before serving.
