Ok, not to be pushing winter, because Lord knows, living in Michigan, I am not trying to get the snow to fly any quicker than it will all on its own...

But this one reminds me of being curled up by a fire (this is only a dream, no fireplace in my house, but I can imagine), with a good book and a bowl of steaming White Chili!  This is the ultimate in cold weather, hot comfort food!

White Chili 
6 Points Plus (5 Points-old system)
4 Servings

Ingredients

1 medium onion, chopped    
1 medium green pepper, chopped    
2 cloves garlic, minced    
3/4 lb lean pork tenderloin, fat trimmed, cubed (1/4")    
15 oz canned white beans, rinsed and drained    
1 1/2 c reduced-sodium chicken broth    
4 1/2 oz canned chopped hot green chili peppers, Can use mild    
1 t Ground cumin    
1 t hot pepper sauce, Franks - 2-4 dashes    
1/2 t table salt    
1/4 t black pepper    
1/4 c cheddar, shredded fat free    

Instructions

Spray non stick pan - sauté onion and green pepper with garlic for 2 minutes. Add pork and simmer for another 3 minutes. Add remaining ingredients and simmer until pork is done. Top with cheese.
